Banana Blueberry Muffins

A nutritious and tasty way to start your day.
Ingredients:
  • 1 very ripe mashed banana
  • 2 egg whites
  • 2/3 cup brown sugar
  • 1/4 cup sunflower oil
  • 1 teaspoon vanilla extract
  • 1-3/4 cup whole wheat pastry flour
  • 1/3 cup yellow cornmeal
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 cup frozen blueberries
  • Topping:
  • 1/4 cup whole wheat pastry flour
  • 1/3 cup brown sugar
  • 1/3 cup Flax Complete or other ground flaxseed
  • 2 tablespoons sunflower oil
Directions:
  1. Preheat oven to 375°. Grease 12 muffin tins.
  2. In a medium mixing bowl, beat together bananas, egg whites, brown sugar, oil and vanilla.
  3. In a separate large bowl, stir together flour, cornmeal, baking powder, baking soda, salt and nutmeg.
  4. Making a well in the dry mixture, add the liquid ingredients and stir just until blended.
  5. On the last strokes add the blueberries. Careful not to overmix.
  6. Divide the batter evenly into muffin tins.
  7. Combine topping ingredients in a small bowl, mix until crumbly. Sprinkle evenly onto each muffin.
  8. Bake 375° 20 minutes or until toothpick comes out clean.
