Energy Treats

For a quick burst of healthy energy, nothing beats Energy Treats. Keep these on hand instead of cookies!
Ingredients:
  • 3 cups Great Granola
  • 3/4 cup oatmeal
  • 1/3 cup Flax Complete or other ground flaxseed
  • 1/3 cup whole wheat pastry flour
  • 1/2 cup dried raisins or cranberries
  • 1 cup Smart Balance Peanut Butter
  • 1/2 teaspoon vanilla extract
  • 3/4 cup honey
Directions:
  1. Preheat oven to 350 degrees F.
  2. Generously grease a 9x13 inch glass baking dish.
  3. In a large mixing bowl, combine granola, oatmeal, Flax Complete, whole wheat pastry flour, and dried raisins or cranberries. Set aside.
  4. In a medium microwaveable bowl, combine peanut butter, vanilla extract, and honey. Microwave for 45 seconds just to soften ingredients and allow them to blend well.
  5. Mix peanut butter mixture into granola mix. Spread evenly into baking dish. Press firmly. Bake 18-22 minutes or until edges are light brown and center is firm to the touch. Remove from oven and let cool slightly.
  6. While still warm, cut into bars.
