Flax Complete Muffins

Fruit and flax muffins make for a tasty treat you don't need to feel guilty about eating.
Ingredients:
  • 1 1/2 cups whole wheat pastry flour
  • 3/4 cup Flax Complete or other ground flaxseed
  • 3/4 cup quick oats
  • 2/3 cup brown sugar
  • 2 teaspoons baking soda
  • 1 teaspoon non-aluminum baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1 cup carrots, shredded
  • 1 1/2 cups apples, shredded
  • 1/4 cup currants or raisins
  • 3/4 cup crushed pineapple, undrained
  • 4 egg whites, well beaten
  • 1 1/2 teasoons vanilla
  • 2 tablespoons sunflower oil
Directions:
  1. In a large mixing bowl, combine flour, Flax Complete, oats, sugar, baking soda, baking powder, salt, and cinnamon.
  2. Gently fold in carrots, apples, currants or raisins, pineapple, egg whites, vanilla, and oil. Mix just until all ingredients are moistened. Do not overmix.
  3. Fill greased muffin tins 2/3 full.
  4. Bake 350 degrees F for 18-20 minutes or until toothpick comes out clean.
