Harvest Apple Pie

The American Classic, modified for your health without sacrificing the great taste!
Ingredients:
  • Topping:
  • 1/4 cup whole wheat pastry flour
  • 1/3 cup brown sugar
  • 1/4 cup Flax Complete or other ground flaxseed
  • 2 tablespoons sunflower oil
  • Crust:
  • 3/4 cup flour
  • 3/4 cup whole wheat pastry flour
  • 1/2 cup expeller pressed canola oil
  • 2 tablespoons milk or soy milk
  • Filling:
  • 6 cups apples, peeled and sliced (Macintosh, Honey Crisp, or Pink Lady preferred)
  • 1/2 cup sugar
  • 2 teaspoons cinnamon
Directions:
  1. Prepare pie crust in medium size bowl by combining all crust ingredients. Mix well using a fork. Press dough into bottom and up the sides of a 9 inch pie pan.
  2. In large bowl, combine apples and other filling ingredients. Mix well. Spoon into pie crust.
  3. Mix topping ingredients together in a small mixing bowl. Crumble on top of apples.
  4. Bake at 375 degrees F for one hour.
