
Whether served whole for lunch or a quick snack, or cut into quarters and served as appetizers, these golden hummus and tomato bagels are hearty, healthy, and yum.
Ingredients:
- 4 100% Whole Wheat or Brainy Bagels, sliced lengthwise
- 1/2 cup Hummus spread (pick your favorite flavor)
- 8 slices tomato, medium thickness
- 6-8 oz. shredded cheese (mozzarella or cheddar preferred)
Directions:
- Preheat toaster oven or broiler.
- Spread 1 tablespoon of hummus onto cut side of each bagel half.
- Place a tomato slice on top of each.
- Top each with a generous sprinkling of shredded cheese.
- Place in toaster oven or broiler. Heat until cheese is melted and begins to turn slightly golden.
- Cool slightly, cut into quarters (for appetizers) and serve.
