Hearty Granola Muffins

Muffins are delicious. Granola is delicious. Combine the two and you're talking delicious squared.
Ingredients:
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup vanilla soy milk or buttermilk
  • 2 egg whites, beaten
  • 3/4 cup brown sugar
  • 1/3 cup sunflower oil
  • 2 cups Great Granola
Directions:
  1. Preheat oven to 400 degrees F. Line or grease 12 muffin tins.
  2. In a large bowl, combine flour, baking soda, and salt. Set aside.
  3. In a smaller bowl, whisk together soy milk, egg whites, sugar, and oil.
  4. Pour liquid ingredients into flour mixture and stir until just combined. Do not overmix.
  5. Add granola and stir until just blended, taking care not to overmix.
  6. Scoop batter into muffin tins.
  7. Bake approximately 25 minutes or until muffin tests done with a toothpick.
  8. Serve warm.
