
Blueberry muffins with the added taste and crunch of granola. The challenge is in eating just one.
Ingredients:
- 1 1/4 cup multi-grain pancake mix
- 2/3 cup soy milk (vanilla flavor preferred)
- 1/2 cup sugar
- 1 egg, beaten
- 1 tablespoon sunflower oil
- 1 teaspoon vanilla
- 1/4 teaspoon nutmeg
- 2/3 cup frozen blueberries
- 1/2 cup Great Granola
Directions:
- Gently fold all ingredients except granola together, saving the blueberries for last. Do not overmix.
- Fill greased muffin tins 2/3 full.
- Carefully spoon granola over each muffin.
- Bake at 350 degrees F for 18-20 minutes or until inserted toothpick comes out clean.
