A Healthier Chicken Salad

A lighter version of the lunch classic that is both sweet and savory and complimented perfectly by our 100% Whole Wheat Bread.

Ingredients

  • 2 lbs. shredded rotisserie chicken
  • 1/2 cup light mayonnaise
  • 1/2 cup plain low-fat yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/3 cup diced celery
  • 1/3 cup dried cranberries
  • 1/4 cup chopped roasted almonds

Directions

  1. Combine mayonnaise and the next 7 ingredients (through black pepper) in a large bowl, stirring with a whisk until combined.
  2. Add chicken, 1/3 cup celery, cranberries, and almonds; toss well to coat.
  3. Best if refridgerated for at least half an hour to allow flavors to meld.
