Keto-Friendly PB&J

Hello from the Natural Ovens Recipe Kitchen! We're very excited to bring you a recipe for a Keto-Friendly PB&J! This has to be one of the most craved items from people on Keto and low carb/low sugar diets, so we're excited to make this a reality! 
We chose to make our own jam for this recipe instead of using a store bought low sugar because we loved the addition of chia seeds and the option to use the berries of your choice berries. And the recipe makes plenty of jam so you can use in other creations, but we think you'll just want to reserve it for this oh so comforting PB&J!

Recipe for Berry Chia Jam

  • 12 oz. Berries (your choice - we used frozen raspberries but you can switch it up and do different berries or fresh ones as well)
  • 1/2 Tbsp Lemon 
  • 1 Tbsp sugar replacement of your choice (if you like a sweeter jam add more)
  • 2 Tbsp chia seeds
  • **Water - the raspberries we used release a lot of liquid but if yours don't add 1-2 Tbsp of water. 




To make the Chia Berry Jam:

  1. Put all berries  in a sauce pan and simmer until the berries start to break down, about 5 minutes. (Add water here if your berries don't release enough liquid)
  2. Add lemon juice and sweetener. Simmer 5 more minutes
  3. Bring the jam to where it's bubbling just a bit and add the chia seeds. Cover and remove from heat. Let sit one hour covered. 
  4. After 1 hours spoon mixture into jar and refrigerate.
