White Bean and Avocado Sandwich

A wonderful balance of herby and creamy make this a satisfying and filling sandwich

2 Sandwiches


  • 1 can white beans, rinsed and drained
  • 1 tablespoon extra virgin olive oil
  • Juice of half a lemon
  • 1 tsp dried parsley (or 1 Tbsp fresh) 
  • Salt and pepper to taste
  • 4 slices multigrain bread, toasted
  • 1/4 red onion, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1 avocado, thinly sliced
  • 4 ounces arugula


  1. Combine the beans, olive oil, parsley, salt and pepper and lemon juice in a medium bowl. Mash until combined while still slightly chunky.
  2. Divide and spread the bean mixture among the slices of bread.
  3. Top each with some red onion, sliced cucumber, avocado, and arugula.
  4. Season with additional salt and pepper.
  5. Top with the remaining slices of bread and serve.
