Falafel Burgers
This delicious, vegetarian dish is a great lunch or summer dinner.

Ingredients
1 15 oz. can of chickpeas, rinsed, drained, and mashed
1 medium onion, finely chopped
1 tsp minced garlic
1 tsp baking powder
3 Tbsp fresh parsley, finely chopped
3/4 tsp fresh coriander
3/4 tsp ground cumin
1/2 tsp salt
1/4 tsp cayenne pepper
1 package Natural Ovens Better Wheat Buns, divided
2 tomatoes, sliced thick
1 cucumber, peeled and sliced
Directions
In a food processor, combine the chickpeas, onion, garlic, baking powder, parsley, coriander, cumin, salt, and cayenne pepper, and two of the Better Wheat buns (broken up).
Process until blended but not pureed.
Form mixture into 6 patty forms.
Either grill or pan fry patties to prepare.
Assemble on Better Wheat Buns with cucumber and tomato slice.
